With Valentine’s Day approaching, you’ve decided to cook up something special for your spouse or partner. So, you will need some wonderful Valentines Day recipes. Creating a special dinner for your valentine can be achieved in the following way.

  • Decide on what type of dinner you are going to prepare. Perhaps his or her favorite meal would suffice. Set the mood by setting your table for two with a red plastic tablecloth under a white lace cloth. Have red and white candles in the center, or on each side of a vase containing red roses. Take out your best china, as well as red napkins.
  • Choose a main dish that you can prepare ahead of time, so you can enjoy the evening. For dessert, why not a cheesecake with strawberries; or a chocolate fondue you can dip the strawberries in; have the red wine ready in a bucket of ice; and you are set to go – for dinner, that is.
Now it’s time to decide what to wear. Perhaps you just purchased a special dress for the occasion. Great! Now just before your spouse or loved one comes home, light the candles; lower the lights, and play your favorite romantic music. Open up the bottle of wine; and you’re romantic evening is about to begin.

Valentine’s Day dinner doesn’t have to be fancy; the one you love will appreciate anything you do to celebrate the occasion. It is a time to rekindle the romance; remind each other how much you love each other; and live in the moment. You don’t need ambience to express how you feel. Just being with each other is enough. But, just in case you do intend to go all out; then by all means enjoy every bit of it. Remember, it’s the little pleasures in life that mean the most. “A rose by any other name, is still a rose.”

Here Are Some Valentines Day Recipes
to Get You Started

Valentine Pancakes

Ingredients:

2 ½ cups all-purpose flour
1 tablespoon baking powder
½ teaspoon salt
1 ¾ cups milk
2 eggs
1/3 cup vegetable oil
1/3 cup packed brown sugar
1 cup semi-sweet chocolate chips
Powder sugar for dusting
3 inch metal heart shaped cookie cutters

Instructions:
Combine flour, baking powder and salt in large bowl. Gently fold in the chocolate chips. In a separate bowl combine the milk, eggs, oil and brown sugar and add to flour mixture. Stir just until moistened (do not over mix)

Heat the griddle or skillet over low to medium heat. Brush the heart-shaped cookie cutters with a little oil and place in griddle. Pour ¼ cup batter into cookie cutters and cook until pancake starts to bubble. Remove the cookie cutters then turn and cook for another minute on the other side or until slightly golden

Sprinkle with dusting sugar and serve.


Strawberry Spinach Salad

Ingredients:

2 tablespoons sesame seeds
1 tablespoon poppy seeds
1/2 cup sugar
1/2 cup olive oil
1/4 cup white vinegar
1/4 teaspoon paprika
1/4 teaspoon Worcestershire sauce
1 tablespoon minced onion
10 ounces fresh spinach - rinsed, dried and torn into bite-size pieces
2 cups fresh strawberries- sliced
1/4 cup slivered almonds

Directions:

In a medium bowl, combine the sesame seeds, poppy seeds, sugar, olive oil, vinegar, paprika, Worcestershire sauce and onion. Cover, and chill for one hour.

In a large bowl, combine the spinach, strawberries and almonds. Pour dressing over salad, and toss. Refrigerate 10 to 15 minutes before serving.
Valentine's Day Chicken Parmesean

Ingredients:

1/2 c fine, dry bread crumbs
1/4 c grated Parmesan cheese
4 Chicken breasts, boneless
1 egg, beaten
3 tb butter
1 8 oz. can tomato sauce
1/2 c water
1/4 tsp dried oregano
1 c shredded mozzarella cheese

Directions:

Combine bread crumbs and parmesan cheese.Dip chicken in egg and coat well. Preheat skillet to 350 degrees. Add butter and cook chicken for about 3 minutes on each side.

Combine the tomato sauce, water, and oregano; pour over chicken. Reduce heat to 220 degrees, cover and cook 25-30 minutes.

Sprinkle with mozzerella cheese; cover and cook just until cheese melts.


Poached Pears in Red Wine

Ingredients:

6 Pears, peeled
½ cup white granulated sugar
2 cups red wine
1 cinnamon stick (or a sprinkle of cinnamon)
The peel of one lemon
1 tablespoon lemon juice

Instructions:

Place the pears (peeled) in a medium saucepan and sprinkle the sugar over the pears. Pour the red wine over to cover the pears. Add the cut fresh lemon peel and cinnamon stick and mix. Simmer on low heat until tender, approximately 15 minutes.
Remove from heat and add the lemon juice. Serve warm.
Quick Chocolate Cherry Pie

Ingredients:

1 graham cracker pie crust
2/3 cup semi-sweet chocolate chips
1 (14oz) can condensed milk
½ teaspoon salt
1 (21oz) can cherry pie filling
8 maraschino cherries, stemmed

Instructions:

Place the chocolate chips, condensed milk and salt in a saucepan and heat over medium heat. Bring to a boil and stir continuously until blended through. Mix in the cherry pie filling and mix well.

Let cool slightly and then pour intro prepared pie crust. Chill for approximately 3 to 4 hours and garnish with the maraschino cherries.
