Thanksgiving stuffing recipes with apples

Apple And Bacon Cornbread Stuffing

Ingredients:

Cornbread

1 1/2 cup all-purpose flour
1 cup yellow cornmeal
1/4 cup sugar
1 tablespoon baking powder
1 teaspoon salt
2 large eggs
3/4 cup milk
1/2 cup butter or margarine

Stuffing

3/4 pound bacon -- cut into 1 inch pieces
2 tablespoons butter
3 medium apples, cored and cut into 1 inch pieces
3 ribs celery, chopped
6 scallions, chopped
1 tablespoon fresh parsley, chopped
2 teaspoons dried marjoram
1 teaspoon dried sage
1/2 teaspoon salt
1/2 teaspoon pepper
2 large eggs
1 3/4 cup chicken broth

Directions:

Preheat oven to 400 degrees F. Grease 9" square baking pan.

Combine flour, cornmeal, sugar, baking powder and salt. Make a well in center of these dry ingredients and add eggs, milk and butter. Stir until just combined. Spoon batter into pan. Bake 20-25 minutes or until toothpick inserted into center comes out clean. Cool on wire rack 10 minutes.

Remove from pan and cut into 1" cubes. Place on ungreased baking sheet. Bake until cubes are toasted, about 30 minutes.

In large skillet over medium heat, cook bacon until crisp, about 15 minutes.

With slotted spoon remove bacon to paper towels. Reserve 2 tbsp. drippings.

In same skillet over medium heat melt butter in reserved drippings. Add apples and celery. Cook until tender, about 15 minutes. Stir in scallions, parsley, marjoram, sage, salt, and pepper.

In a medium bowl, whisk together eggs and broth. In large bowl combine corn bread cubes, bacon and apple mixture. Stir in egg-broth mixture until just combined.

Fill turkey cavities with some stuffing. Spoon remaining stuffing into greased 2-quart casserole, cover, and put in oven to heat through 30 minutes before turkey is done.


Almond Apple Wheat Bread Stuffing

Ingredients:

2 cups Granny smith apples, chopped
1 1/2 cup sliced almonds
3/4 cup onions, chopped
3/4 cup celery, chopped
4 tablespoons butter
1 teaspoon cinnamon
1/2 teaspoon poultry seasoning
1/4 teaspoon salt
6 cups Wwole wheat bread cubes
1 cup raisins
1 egg; lightly beaten
1/3 cup apple cider or juice (more if needed)

Directions:

Saute apples, almonds, onion, and celery in butter for 5 minutes, stirring frequently. Remove from heat. Stir in cinnamon, poultry seasoning and salt. Toss together bread cubes and raisins; add apple mixture. Stir egg in apple cider; toss into bread mixture. Add more apple cider if a moister stuffing is desired.

Will stuff a 15 to 20 lb turkey; spoon any remaining stuffing into a lightly greased 9x5 loaf pan.

Bake, covered, during the last 30-40 minutes of roasting.


Cornbread Stuffing with Sausage and Apples

Ingredients:

1/2 pound bulk pork sausage
1 cup small diced onions
1 cup small diced celery
2 tablespoons butter
1 tablespoon fresh, chopped sage
1 tablespoon fresh, chopped rosemary
1 tablespoon fresh, chopped thyme
3 cups crumbled cornbread
3 cups cubed stale bread
1 cup chicken stock
1 large peeled, cored and diced apple
2 tablespoons chopped parsley
1 tablespoon poultry seasoning
1 teaspoon salt
1/2 teaspoon ground black pepper
1 cup chopped red pepper
1/2 cup raisins (optional)

Directions:

Saute sausage until brown. Remove from pan and place in a large mixing bowl . Saute onions and celery in butter. Add sage, rosemary and thyme. When the mixture is softened, about 3 minutes, put into bowl with sausage. Add the remaining ingredients to the mixing bowl. If mixture is too dry add more stock.
