Sweet Potato Casserole Recipe

Ingredients:

3 pounds sweet potato
12 ounces sweetened condensed milk
1/2 cup butter, melted
4 eggs
2 cups sugar
1 teaspoon cinnamon
1 teaspoon mace

Topping:

1/2 cup butter, melted
3/4 cup brown sugar
1 1/2 cup graham cracker crumbs
1 cup pecans

Directions:

Boil Sweet potatoes until they are cooked (30 minutes) Drain and peel. Measure about 4 cups. Preheat oven to 400 degrees. Grease 13x9x2 baking dish. Mash the potatoes. Add the milk, butter, eggs, sugar, cinnamon, and mace. Mix fully, pour and scrape into the baking dish. Bake for 20 minutes.

Topping: Mix butter, sugar, graham cracker crumbs, and pecans. Spread topping on the casserole. Bake and additional 15 minutes.

Here is a sweet potato casserole recipe that uses canned sweet potatoes:

Crockpot Sweet Potato Casserole

2 (18-oz.) cans sweet potatoes, drained & mashed
1/4 cup butter, melted
2 tbsp. sugar
2 tbsp. light brown sugar, packed
1 tbsp. orange juice
2 eggs, beaten
1/2 cup milk
1/2 cup chopped pecans
1/2 cup light brown sugar, packed
2 tbsp. flour
2 tbsp. butter, melted

Lightly butter crockpot. Mix mashed sweet potatoes, butter, 2 tbsp. granulated sugar, and 2 tbsp. brown sugar together in a large bowl. Beat in juice, eggs, and milk. Transfer to the crockpot.

Combine pecans, brown sugar, flour, and 2 tbsp. butter. Spread evenly over the top of the sweet potatoes. Cover and cook on HIGH for 3 to 4 hours.

Makes about 6 servings

Sweet Potato Casserole

2 16 oz cans sweet potatoes
14 oz can pineapple tidbits in unsweetened juice, undrained
4 tb butter
4 tb dark brown sugar,firmly packed
1 1/2 c miniature marshmallows
Butter for casserole

Drain potatoes and discard liquid. Drain pineapple and set pineapple and juice aside.

In a small, heat-resistant, non-metallic bowl, melt butter in microwave oven 30 seconds. Place potatoes in medium-sized bowl and mash with a potato masher or fork. Add melted butter and brown sugar. Stir until well combined.

Stir in pineapple juice until desired consistency is reached. Fold in pineapple tidbits and marshmallows.

Butter a shallow, 1 1/2-quart, heat-resistant, non-metallic casserole and spoon potato mixture into casserole. Heat, uncovered, in microwave oven 5 to 6 minutes or until potato mixture is heated through and marshmallows begin to melt.
Makes about 8 servings

Simple Sweet Potato Casserole

6 large sweet potatoes
1/2 cup butter
1/2 cup raisins
2 oranges, juice and all
1 dash cinnamon
1 cup brown sugar
2 eggs
Minature marshmallows for topping

Bake sweet potaotes. Peel and mash. Add eggs, butter, orange jusce, orage sections, cinnamon and brown sugar to mashed potatoes.

Place in a baking dish and bake at 400 degrees for 30 minutes. Top with minature marshmallow and continue to heat (a few minutes) until they are browned.
