Mom's Best Recipes and Family Favorites

CRANBERRY ORANGE REFRESHER
32 oz. cranberry juice cocktail chilled
1/3 c. sugar
3/4 c. lemon juice
1 liter orange soda, chilled
Combine cranberry juice, lemon juice, and sugar; stir until sugar dissolves. Chill. Just before serving add orange soda. Serve over ice.
APPLE SPICE DRINK
3 tsp. grated orange peel
1 whole nutmeg, crushed
3 cinnamon sticks, crushed
3 c. apple juice
3 tsp. whole cloves
6 whole cinnamon sticks
Combine orange peel, 3 crushed cinnamon sticks, cloves and nutmeg in a small bowl.
Tie dry ingredients in a double thickness of cheesecloth to make a sachet, or secure in a large tea-straining ball.
In a medium pan, simmer apple juice with spices for at least
20 minutes. Ladle into mugs and garnish each with a cinnamon stick.
SPINACH BALLS
2 10 oz. pkgs. chopped, frozen spinach
3/4 c. grated parmesan cheese
2 c. Pepperidge Farm herb stuffing(crushed)
1 large onion, chopped fine
1 1/2 tsp. garlic salt
1/4 tsp. nutmeg
1/2 tsp. dried crushed thyme
1 tsp. black pepper
6 eggs, beaten slightly
1/2 c. melted butter
Mix well and form into balls. Place on well-greased (sprayed with Pam or other cooking spray) cookie sheet. Freeze on sheet. After balls are frozen, store in plastic bag in freezer.
Bake in oven (straight from freezer on sprayed cookie sheet) at 350-375º for 20-25 minutes until firm but not hard. Makes 2-3 dozen. Can be reheated in microwave.
CORN CHOWDER
This is one of our family's favorite recipes. My mother, who is vigorous and healthy at 88, still makes it for us. She serves it with Indian Fry Bread (recipe below)
2 cans cream style corn
1/2 c. water
1 lb. bacon
2 c. milk
1 large onion, chopped
1 c. cooked, diced potatoes (or pkg. of shredded
hash browns)
Cut bacon into small pieces and fry until lightly browned. Drain off most of the fat. In the same pan, add 1/2 c, water to remaining bacon drippings and saute the onions.
Place the bacon, onion and liquid into a large kettle. Add the corn, potatoes and milk. Heat over low - medium heat just to boiling. Serve with warm bread.
INDIAN FRY BREAD
2 c. sifted flour
1 egg
1/2 tsp. salt
1/2 c. warm water or milk
4 tsp. baking powder
Sift first three ingredients together and stir in beaten egg. Add water or milk to make soft dough. Round up on lightly floured cloth or bread board. Knead lightly. Roll or
pat out 1/2 inch thick. Cut into strips about 2 X 3 inches and slit centers of strips. Drop into deep
fat. Brown on both sides. Serve hot with Corn Chowder (above).
APPLE-RAISIN PIE
2 c. sugar
1/8 tsp. salt
1 c. butter
1 c. tart, unpared apples, chopped
4 eggs
1 c. raisins
1 T. flour
1 c. coarsely chopped pecans
3/4 tsp. cinnamon
1/4 tsp. nutmeg
1 unbaked 10 inch pie shell
Cream together sugar and butter until light and fluffy. Add eggs, one at a time, beating well after each addition. Add flour, cinnamon, nutmeg, salt, and vanilla;beating well.
Stir in apples, raisins, and pecans. Pour into pie shell.
Bake at 350 degrees for 45 minutes or until golden brown.
Serve warm.
