Homemade Eggnog Butter Cake

Cake Ingredients:

1/2 c. softened butter
2 lg. eggs
1 tsp. vanilla extract
2 1/2 tsp. baking powder
1 1/2 c. egg nog
Candied cherries - red and green
1 1/2 c. sugar
1 tsp. rum extract
3 c. sifted cake flour
3/4 tsp. salt
2 tbsp. water

Glaze Ingredients:

2 tbsp. Karo syrup
2 3/4 c. powdered sugar
3 tbsp. egg nog
1/2 tsp. rum extract

Directions:

Beat the butter until it is creamy. Gradually add sugar beating until fluffy and sugar is dissolved.

Add the eggs one at a tim then mix in the flavorings.

Sift together the flour, baking powder, and salt.

Add butter mixture alternately with the eggnog and water beating until smooth.

Pour batter into a greased and floured 10 inch tube pan. Bake at 350 degrees for 50-55 minutes or until done; cool in pan for 15 minutes. Remove from pan and cool.

Glaze and decorate with candied cherries.
