8 cups pared, sliced tart baking apples (about 3 pounds apples)
1 cup sugar
2 tablespoons all purpose flour
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon salt
1/2 teaspoon grated lemon rind
2 to 3 teaspoons fresh lemon juice
2 tablespoon butter
Pastry dough for a double crust pie (use your favorite recipe or ready-made pie crust dough)
1 egg yolk
1 tablespoon water
Directions:
Preheat oven to 425° F.
Roll out half of the pastry dough and place it in a 9-inch, deep dish, pie pan.
Combine sliced apples, sugar, flour, cinnamon, nutmeg, salt, lemon rind and lemon juice in large bowl until apples are well coated with other ingredients.
Place apple mixture into pie plate and dot with butter.
Roll out remaining half of pastry dough. Cut into strips for a lattice top. (see video instructions below if you need help with this step.)
Place lattice crust on top of apple mixture. Brush crust with egg yolk mixed with water.
Bake for 40-45 minutes. Remove from oven and cool on rack. Serve warm or room temperature.

Easy homemade apple pie recipes are those that use pre-made refrigerated crusts and eliminate the "lattice crust" step. The good news is that they are just as tasty! Here is one we like at our house:
Ingredients:
8 large pie apples, peeled, cored and thinly-sliced
1/3 cup sugar
2 Tablespoons all-purpose flour
1 teaspoon cinnamon
2 purchased, refrigerated, pie crusts
1 egg white
Directions:
Preheat oven to 400 degrees F.
Unfold one of the refrigerated pie crusts and place it in a 9-inch pie plate. Brush pie crust with egg white to prevent the crust from getting soggy.
Combine the sliced apples with the remaining ingredients and place apple mixture into the prepared crust.
Place the second prepared pie crust over the apple mixture, tuck the excess under the bottom crust, then crimp the pie crust edges with your fingers.
Cut several slits in the top crust to allow steam to escape and loosely cover the pie with aluminum foil.
Bake, covered, for 10 minutes. Remove the aluminum foil, lower the temperature to 375 degrees F., and bake pie for another 30-40 minutes.
