Beans and Bean Recipes

Frugal Meals Beans When you plan frugal meals beans should be on hand at all times. They are one of the basic foods that add wonderful nutrition for very little money.

The cheapest way to add beans to your recipes is to buy dried beans: kidney beans, great northern beans, amd many other varieties. Some pre-planning is necessary if you are using dried beans. They need to be soaked for several hours or overnight.

Canned beans are also fairly cheap and a more convenient option if time is an issue. You can substitute dried beans in these recipes if you choose.

Red Beans & Rice

Ingredients:

1 lb. smoked sausage
1 can (10 ounces) tomatoes and green chilies
2 cans (16 ounces each) red beans or dark red kidney beans, undrained
1 can (10 3/4 ounces) cream of mushroom soup
3/4 tsp Creole seasoning
4 -5 cups cooked white rice

Directions:

Cut sausage into 1 inch chunks. Brown sausage in 10 inch skillet. Add tomatoes, beans, soup, and seasoning and heat through. Add cooked rice and heat a bit more if necessary.


Beef and Beans
Ingredients:

1 pound ground beef 1 cup ketchup
1 cup brown sugar
2 small tubes of biscuits tubes
1/2 cup shredded cheddar cheese

Directions:

Brown ground beef. Drain and place in ungreased, round 1 1/2 qt casserole dish. Stir in beans, ketchup and brown sugar. Mix well. Cut biscuits in half and place in two rows around the casserole dish on top of beef and bean mixture. Sprinkle with cheese.

Bake at 350 degrees until for about 20 minutes or until the biscuits.


Pinto Beans and Ham

Ingredients:

1 lb. pinto beans
1 large can of tomato sauce
Ham chuncks/pieces (approx. 1 1/2 cups)
One clove garlic, minced
Cayenne pepper, garlic powder and black pepper to taste

Directions:

Soak beans in water overnight. Drain and rinse. Put all ingredients in crock pot. Add black pepper, onion powder, cayenne, garlic powder and cook for 12 hours on low. Salt if needed after beans are cooked.


Barbeque Beans

Ingredients:

2 cans Pork-and-Beans
1 lb. Pork or Turkey Sausage crumbled
1-2 Tbs. Worchestershire Sauce
1 med. onion, chopped
1 clove garlic
1 cup barbeque sauce or honey BBQ sauce
Salt and pepper to taste

Directions:

Brown the sausage in a heavy skillet. Chop the onion and garlic into the skillet while the sausage is cooking. Drain off the fat. Add remaining ingredients and simmer for ten minutes of so to let the flavors blend.


Meatless Chili

Ingredients:

1 can chili beans in gravy
1 can kidney beans
1 can stewed tomatoes
1/2 cup sliced celery
1/4 cup diced onion
1 Tbsp chili powder
1 cup cooked rice
Salt to taste
Optional: sour cream, grated cheese, hot sauce

Directions:

In sauce pan, cook celery, onion and tomato for 5 minutes. Add everything else but rice, sour cream and cheese. Cover and simmer for 15 minutes. Add rice, put into bowls and top with any or all of the "optionals".
