Baked Sweet Red Snapper

Ingredients

- 1lb red snapper fillet
- 1 tbls crushed bay leaf
- 1 tbls ground dill
- 3 tbls olive oil
- 1/4 cup pineapple apricot jam (or something equivalent)
- 1 slice thick cut bacon
- 2 tsp powdered garlic
- 1/4 cup chopped onion
- 3 tbls Worcestershire sauce
- 3 tbls lemon juice
- 1 tsp each salt and pepper

Preheat oven to 375

Prepare a non-stick baking pan with oil, being sure to coat the bottom of the dish. Clean red snapper fillet and place in pan. Mix lemon juice and Worcestershire sauce together and pour over fillet. Place bacon across top. Spread jam over this. Sprinkle fillet with dill, garlic, bay leaf, and salt and pepper. Arrange onion on sides of fish.

Cover with foil and place on center rack. Bake for 30 minutes or until fish flakes easily and is no longer translucent.

Remove fish from oven and allow to rest for 5 minutes.

Remove foil.

Set temperature to broil and return fish to oven (do not adjust height of rack)

Broil for an additional 5 to 6 minutes, or until bacon is crisp.

Serve with boiled or baked parsnips.
